Nebbiolo Langhe

advanced divider

Red Wine

750 ml

The fruit for this Nebbiolo was sourced from Serralunga d’Alba–an area in Barolo known for its structure in wines. Contrary to the expectations, this is not a light table wine–it’s a wine with structure and profound aromas of black cherries, black tea, and star fresh violets. Its generous tannin structure and precise acidity work in harmony with the long-lasting finish, making this a great example of what Langhe D.O.C. can be when treated right.

Serving Temperature: Serve Nebbiolo Langhe Marchese d’Azeglio slightly below room temperature, around 60–65°F (15–18°C), to allow its aromas to fully open up.
Glassware: Use a large red wine glass to help the wine breathe and highlight its delicate aromas.

Grilled and Roasted Meats

  • Grilled Steak: A ribeye steak or T-bone steak grilled to perfection is a classic match for Nebbiolo. The wine’s tannins help cut through the rich, fatty texture of the meat, while its acidity balances the flavors.
  • Lamb Chops: Grilled lamb chops with garlic and rosemary or roast leg of lamb pairs excellently, as the earthy flavors of the lamb complement the wine’s tannic structure.
  • Roast Pork: Roast pork with a fennel rub or a mild spice blend works well, as the slightly sweet and savory notes of the pork enhance the fruit and earthy qualities of the wine.

Pasta Dishes

  • Pasta with Ragu: Pasta with meat ragu (especially a Bolognese or Piemontese-style ragu) pairs beautifully with Nebbiolo. The richness of the sauce is balanced by the wine’s acidity and tannins.
  • Pappardelle with Wild Boar Ragu: A rustic dish like wild boar ragu on pappardelle (wide flat pasta) complements the wine’s bold and earthy profile.
  • Agnolotti: Agnolotti (Piedmontese stuffed pasta) filled with braised meat or cheese is a perfect pairing. The delicate filling and rich broth pair well with the wine’s complexity.

Cheese Pairings

  • Aged Parmesan: Parmigiano-Reggiano, particularly the aged varieties, pairs beautifully with Nebbiolo. The nutty, savory flavors of the cheese complement the wine’s fruit and tannins.
  • Pecorino: Aged Pecorino Romano or Pecorino Sardo offers a slightly saltier option that balances well with the wine’s acidity and tannic structure.
  • Toma Piemontese: A regional cheese like Toma Piemontese is ideal, as its creamy texture and mild flavor complement the subtle floral and fruity notes in the wine.

Charcuterie

  • Cured Meats: A platter of prosciutto, salami, or soppressata works wonderfully with Nebbiolo, as the wine’s acidity cuts through the fat and the cured meats’ saltiness.
  • Pâté: Rich, savory duck pâté or country pâté with herbs and spices pairs nicely with the wine’s depth and complexity.

Mushroom Dishes

  • Risotto with Mushrooms: A creamy risotto with wild mushrooms (especially porcini) pairs beautifully with Nebbiolo, as the earthy flavors of the mushrooms enhance the wine’s complexity.
  • Mushroom Ragù: A vegetarian mushroom ragù with tomatoes, garlic, and herbs pairs well with the wine’s fruity and earthy notes.

Hearty Mediterranean Dishes

  • Osso Buco: The rich and flavorful Osso Buco (braised veal shanks) pairs wonderfully withNebbiolo. The wine’s acidity balances the richness of the dish, while the earthy flavors of themeat complement the wine’s profile.
  • Eggplant Parmesan: Eggplant Parmesan (Melanzane alla Parmigiana) with tomato sauce and cheese complements the fruit and savory aspects of the wine.

Grilled and Roasted Game Meat

  • Venison: Roast venison or grilled venison steaks with a berry sauce is an excellent match, as the wine’s tannins and earthy character enhance the gamey flavors of the meat.
  • Wild Boar: Wild boar stew or braised wild boar with rosemary and garlic works beautifully with Nebbiolo, as the wine’s acidity cuts through the richness of the game.

Pizza

  • Pizza with Sausage: Italian sausage pizza or a pizza with spicy pepperoni pairs well with the bold flavors of Nebbiolo.
  • Margherita Pizza: A Margherita pizza with tomato, mozzarella, and basil can work too, as the wine’s acidity complements the fresh, tangy tomato sauce and smooth cheese.

Vegetarian Dishes

  • Grilled Vegetables: Grilled vegetables like eggplant, zucchini, and peppers, especially when roasted with herbs like rosemary and thyme, are a great match for Nebbiolo’s earthy character.
  • Stuffed Mushrooms: Stuffed mushrooms with breadcrumbs, garlic, and cheese enhance the earthy, savory notes in the wine.

Dessert Pairings (if wine is fruit-forward)

  • Berry-based Desserts: A dessert like mixed berry tart or chocolate-dipped strawberries pairs well if the wine leans more toward ripe fruit flavors.
  • Chocolate and Hazelnut Desserts: A dark chocolate dessert (especially one with hazelnuts) will complement the wine’s tannins and fruit notes.
