Sparkling Wine

Jazz Bruit is a sparkling wine from Slavonija, Croatia where Riesling Italico, or Grasevina as they call it, is the signature grape. Wines made from Riesling Italico have a distinct, pleasant acidity that is combined with wonderful aromatics – which give the complexity when transferred to sparkling wine production. This is why Josipovic Winery decided to use Riesling Italico as a base for this sparkling wine, and enhanced it with Riesling Renano for an extra kick. With two and a half years on the lees, Jazz gives creamy, toasty flavors, intertwined with delicate aromatics of white flowers, musk, and toasted bread. Its high but precise acidity will help to rinse out any palate, making this a perfect food-friendly wine. Although it works well with food, this will make a glass of great, standalone bubbles, or a wine worth meditating upon.

Serving Temperature: Serve your sparkling wine chilled, ideally between 42–50°F (6–10°C), to best showcase its crispness and bubbles.
Glassware: For the best experience, serve sparkling wine in a flute or white wine glass to enhance the bubbles and aroma.

Seafood and Shellfish

  • Oysters: Fresh oysters are a classic pairing for sparkling wine. The wine’s acidity and bubbles complement the briny, mineral flavors of the oysters.
  • Lobster: A luxurious pairing of lobster tail with lemon butter or a mild herb butter sauce works beautifully with sparkling wines, as their acidity balances the richness of the lobster.
  • Shrimp Cocktail: The crisp, refreshing nature of sparkling wine pairs excellently with shrimp cocktail served with a tangy, horseradish-infused sauce.

Cheese Pairings

  • Soft Cheeses: Sparkling wine pairs well with creamy, mild cheeses like Brie, Camembert, and Burrata, which complement the wine’s bubbles and acidity.
  • Goat Cheese: Fresh, tangy goat cheese (such as chèvre) works wonderfully, especially if you add a drizzle of honey or herbs to the cheese.
  • Gruyère: The nutty flavor of Gruyère cheese pairs well with the yeasty, toasty notes in sparkling wine.

  • Fried Chicken: A surprising but perfect pairing, fried chicken works beautifully with sparkling wine. The crispy, crunchy texture contrasts nicely with the wine’s effervescence and acidity.
  • Grilled Chicken: Grilled chicken, particularly with a lemon herb marinade, is a great choice, as the wine’s citrus and bubbles complement the flavors of the chicken.
  • Duck Breast: Duck breast, especially with a sweet sauce like orange glaze, complements the wine’s fruitiness and light acidity.

    Josipovic Winery is an artisanal winery from Eastern Croatia, from the region Slavonija, specializing in sparkling wine production. With the desire of making terroir-driven wines, they took a different path from cultivating Chardonnay and Pinot Noir, and instead focus on cultivating grapes that have traditionally been grown in Slavonija throughout history.
