Soave Superiore

White Wine

750 ml

The harvest of the Garganega grape used to produce Soave begins around mid-September and lasts until the end of October. Two passes through the vineyards along with careful grape selection ensure perfect ripening. The grapes are then left to dry for two months to intensify the flavor. The wine matures for one year in lightly toasted barrels. The oak is perfectly balanced – not overwhelming the wine, simply adding texture and complexity. Its aroma abounds with exotic fruit and gorgeous spicy, nutty notes. The palate has just a hint of vanilla with quite intense stone fruit, and traces of banana and pineapple. This Soave is superbly balanced, a demonstration of masterful vinification.

Serving Temperature: Serve Soave Superiore Villa Canestrari chilled, ideally at around 50–55°F (10–13°C), to preserve its refreshing acidity and delicate flavors.
Glassware: Use a white wine glass with a slightly larger bowl to allow the wine to breathe and release its delicate aromas.

Seafood

  • Grilled Shrimp: Grilled shrimp with a lemon-garlic marinade or a simple squeeze of fresh lemon juice pairs beautifully with the wine’s crisp acidity and citrus notes.
  • Lobster: Lobster with butter or a light lemon-garlic sauce enhances the wine’s freshness, while its acidity cuts through the richness of the lobster.
  • Fish Tacos: Lightly fried fish tacos with a tangy slaw are a great match, as the wine complements the fresh, zesty flavors.
  • Sautéed Scallops: Sautéed scallops with butter, herbs, and a touch of lemon pair wonderfully with the wine’s minerality and acidity.

About the Winery:

Villa Canestrari is an artisan winery that has been working 20ha of land in the Illasi Valley for four generations. Their story began in 1888, when Carlo Bonuzzi started making and bottling wines on the estate. Villa Canestrari as a brand was created in the 1990s, with the merging of the Bonuzzi and Franchi families and thus becoming a symbol of high-quality winemaking.
